Lemon Yoghurt Cake

Hey Bloggers, Today it is my Dads Birthday he turned 41 years old. He got Lollies and liquorice and will get some new sunglasses after lockdown. We made him a cake. This is the recipe. 

For the cake you will need, 125g of butter, 1 cup of caster sugar, 2 Lemons, finely grated rind (save the juice for icing), 3 eggs, 1 cup of flour, 1 tsp of baking powder and 3 quarters of a cup of yoghurt. 

For the icing, you will need. 1 cup of icing sugar, the juice of 2 lemons and 1 extra lemon zest for decoration.  


Heat oven to 160C fan bake. Grease a 20cm spring-form cake tin. Combine softened butter, sugar and lemon zest in a bowl and beat with an electric mixer until pale and creamy. Beat in eggs, one at a time. 
  1. Sift dry ingredients together and add alternately with yoghurt, stirring to just combine and form a smooth batter.
  2. Spoon mixture into prepared tin and bake for 45 to 50 minutes, or until a skewer inserted comes out clean. Transfer to a wire rack to cool. Once cold, remove the cake from the tin and spoon over lemon drizzle icing so it covers the top and runs down the sides of the cake. Decorate with extra lemon zest, if desired. 
  3. To make the icing, combine sifted icing sugar and lemon juice in a bowl and stir to form a smooth and pourable icing. Add a little boiling water, if necessary, to achieve the correct consistency.

  2. Nice work Liam! That cake looks so delicious. Lemon cake has got to be one of my favourites. Thanks for sharing the recipe, I might have to give it a go! I agree that maybe listing the ingredients one after the other underneath each other might make the recipe a little easier to follow. I hope you are enjoying term 2 online so far and all is going well. Keep up the awesome work! Caitlin :)
